I am looking to voluntarily quit my job to take care of my 18 month old baby. My mother was taking care of the baby before, but she is not feeling well anymore and is unable to take care of the baby. We also applied to multiple daycare centers but are still on the waitlist (it has been more than a year since we have applied). We looked at home daycares, but none are licensed around the area and didn't seem safe. Would I be able to receive EI benefits if I quit to take care of my baby. How would I go about doing this to receive the EI benefits and not be denied? What should I say to my company? And what should I do before applying for the EI benefits to avoid any denials? I live in Ontario.

No, generally speaking you cannot receive EI if you resign from your employment, unless your employer is forcing you to resign under duress or you are resigning in protest of a significant change to your employment, such as a temporary lay-off, or a demotion or pay cut.
