My Employment Agreement, which I signed in July of 2020, states that I need to give the company a written resignation letter at least 3 weeks in advance. I am wondering if I can renegotiate it to be 2 weeks in advance. Also, what would happen if I just quit without any prior notice>

Under the Employment Standards Act, there is no requirement that employees give notice of resignation. However, your contract may include an agreement to provide a certain amount of notice prior to resigning. Failing to do so may be a breach of contract, which could give rise to your employer having a claim against you if they can establish they suffered damages as a result of your failure to give notice.
