My doctor reduced my work to 4 days/wk, then gave an indefinite note. The claims admin reopened my file and now wants my school accommodation letter and course outline. These courses aren’t job duties. Are they allowed under BC/Canada law to request unrelated school documents for a work accommodation?

Generally speaking, an employer is entitled only to documents in respect of the prognosis and accommodation requirements relating to your condition. If the school documents somehow shed light on those issues, they may be relevant and required.
