"If the employee’s period of employment is five years or more upon the completion of the vacation entitlement year, the employee’s entitlement is to three weeks of vacation time in respect of that vacation entitlement year. Example: On May 31, 2019, the employee completed five years of employment and so will be entitled to three weeks of vacation for the vacation entitlement year June 1, 2018 to May 31, 2019". I read this on ontario.ca. Is it true? Would I be entitled to three weeks vacation as I reach 5 years on August 27 2025?

Yes after 5 years of employment you are entitled to 3 weeks vacation or 6% of pay in lieu.
